Wedding: Food & Drink ? Almost Vegan

Our wedding catering was provided by the incredible Natasha Bailey of Eatable Swank. Natasha swooped in to rescue me from my catering conundrum (i.e. having a very hard time finding gluten-free vegan catering in Kansas City!) even though her new business wasn?t even fully set up yet. She basically let me design the menu top to bottom, and came through with the most delicious buffet food I?ve ever had?and our guests agreed. There were NO leftovers!

I am devastated to report, however, that I do not have photos of the vast majority of the food served that night. Our photographer had a medical emergency shortly after the ceremony and had to leave immediately, so we have no photos from dinner, including the toasts and speeches. (Later that evening, a photographer friend of the DJ?s came and snapped some reception photos, but only about an hour?s worth.) I was SO PROUD of the food we served, and everybody ? literally everybody, full-blown carnivores and all ? loved it and gushed about it. I wish with all my heart I had photos of everything to show you, but all I?ve got from the day of are a few shots from before the ceremony and two guests? camera-phone shots of their plates. I do, however, have a few photos from our tasting sessions that I can show you, even though the final dishes may have been slightly different. So, onwards.

100% vegan and gluten-free buffet
? Fresh fruit cups & kebabs with vanilla-mint syrup
? Hummus with olive oil & Arabic spice
? Raw Caesar salad with avocado dressing & Brazilnut parmesan
? Tuscan spaghetti with pesto, white beans, & broccoli
? Thai-style stir-fry with noodles & mixed vegetables
? Indian chickpea curry with roasted cauliflower
? Choice of brown rice or quinoa
? Roasted baby potatoes with garlic & sea salt

Natasha attended to every detail, right down to the recycled, eco-friendly flatware, plates, and bowls.


Fresh fruit cups & kebabs with vanilla-mint syrup
We served these during cocktail hour. Matt and I didn?t even get to have one; sad!


Hummus with olive oil & Arabic spice
Natasha?s hummus was dreamily smooth and exotically spiced. Honestly some of the best hummus I?ve ever had.


The hummus was served with gluten-free rice chips.


Raw Caesar salad with avocado dressing & Brazilnut parmesan
No photo, sadly, but this Caesar salad was delectable. We served it with an optional scoop of olive tapenade on each portion. (Matt and I made all these namecards ourselves, by the way!)


Indian chickpea curry with roasted cauliflower
We served this with a choice of brown rice or quinoa. Even people inexperienced or unfamiliar with Indian food fell in love with this mild, saucy curry.
Tuscan spaghetti with pesto, white beans, & broccoli
Made with gluten-free corn noodles, this pasta with fresh basil pesto was bright-tasting and wonderful.


Thai-style stir-fry with noodles & mixed vegetables
Natasha came up with the perfect complex stir-fry sauce for this delicious mess of noodles and veggies.


Roasted baby potatoes with garlic & sea salt
BEST roasted potatoes Matt and I have ever had, period. The perfect amounts of olive oil, sea salt, and garlic. I can?t even describe how good these were! In fact, this was the first dish the buffet ran out of.


We provided an open bar that evening, with wines by The Vegan Vine.

Our wedding buffet was everything I wanted it to be, and more. We and our guests all felt it was the best catered food we?d ever eaten. I wish I could eat it all again! A thousand thanks to Eatable Swank for making it all happen.
